Spring Delight Salad Will Brighten Your Holiday Table

This is not your mama’s jello fruit salad. Your kids will think you are having dessert with your turkey and dressing. It will be the one dish you are asked to bring to the pot luck dinners, and you should.

When I was a kid, I hated going to Wednesday night church pot lucks and getting the Jello™ salad only to find that it wasn’t my grandma’s holiday recipe. The Jello™ I received had canned mixed fruit floating around in it. Sometimes it even had sliced celery. Yuck! Who thought that was good?

Grandma’s salad, on the other hand, was creamy and smooth with just the right amount of tart fruit and pecans evenly mixed throughout. It was magical and became a hit with my husband’s family as well.

A great reason to make this salad is that it can be made days ahead, one less thing you have to do on the big day, and it is scalable. Make twice as much, if you need to. Take this to any family picnic or neighborhood block party. Everyone will love it.

1 package of lime Jello™ (6 oz.)
